With the temperatures finally dropping a little in North Van, I’m back in the kitchen trying some home cooking. The other day, I was craving pizza and was inspired to make my own. I’ll say this up front–there’s a very good chance I’ll never order a pizza again.  In half the time it typically takes for the average delivery pizza place to fulfill my order (for 4 times the price), I made a meal in 20 minutes with fresh ingredients and with knowing exactly what I was putting into my body. It was so easy!

Here’s what to do:

First, preheat the oven to 350 degrees Fahrenheit. While that takes place, prep the toppings of your choice. I simply used what I had in my fridge. I prepped some mushrooms, tomatoes, mixed greens, jalapeño cheddar cheese and lean microwaveable bacon. Other great options would be peppers, onions, any meat, pineapple… it’s up to you! I then placed two pieces of fresh, store-bought naan bread from my bakery on a baking sheet.

In a bowl, I mixed up roughly 1/2 cup of olive oil with 2-3 tsps of minced garlic. You can add more or less garlic to taste. I mixed it up and spread the mixture over the 2 pieces of naan bread on my baking sheet then placed the baking tray into my oven for 5 minutes to crisp up the naan.

Now for the fun part! Build your pizza just the way you like it. This would be a great activity for a family with young kids or teens, vacationing at a cabin or even a dinner party with friends. It is especially great for guests who have food intolerances/preferences. For example, I added bacon but this could easily be vegetarian by skipping the bacon and adding black olives or artichoke hearts.

I added the cheese to the base and loaded up the toppings from there. As an option, save some cheese to sprinkle on top (I just flat out forgot). To finish, add a little balsamic vinegar to the remaining olive oil + garlic spread mix and drizzle all over the pizzas.

Place the tray back in the oven and bake your pizzas for another 10-12 minutes or until everything is cooked and the naan crust is toasted.

Serve immediately along with your favourite Italian Chianti, Spanish Tempranillo or Garnacha for a killer pizza party with your family + friends. I can’t wait to try this again – the topping opportunities are endless!
